Sweet and tangy mango pickle.

Gur wala aam ka achar

Ingredients to make Gur wala aam ka achar

  • Raw mangoes 500 gm
  • salt 20 gm
  • jaggery 500 gm
  • fennel seeds 1 tesp
  • coriander seeds 1 tesp
  • fenugreek seeds 1/2 tesp
  • turmeric powder 1/4 tesp
  • red chilli powder 1/2 tesp

How to make Gur wala aam ka achar

  1. Peel and cut mangoes in desired sized pieces.
  2. Add salt to mango pieces and leave it overnight to marinate.
  3. Next morning strain the mango pieces. Retain the salt water for later use.
  4. Sundry mango pieces for 3-4 hours.
  5. Dry roast fennel seeds, coriander seeds and fenugreek seeds.
  6. Crush the roasted spices coarsely.
  7. Heat retained salt water with Jaggery.
  8. When Jaggery dissolves completely add mango pieces, crushed spices, red chilli powder and turmeric powder.
  9. Cook until syrup reaches single strand consistency.
  10. Cool and fill in clean jar.
  11. It's ready to use. Still tastes better after maturing for a week. If possible keep jar in sunlight for 3-4 days.

My Tip:

Turmeric gives it beautiful golden color. Increase the quantity of Jaggery if likes more sweet. Here it sweet and tangy.
