Age old South Indian breakfast . Most popular in Tamil Nadu , Andhra and Karnataka . Fibre and calcium rich tummy filling breakfast which supplies ample energy . Diabetic friendly , controls blood pressure levels .

Ingredients Serving: 7

  1. Ragi flour 1 cup
  2. semolina 1/2 cup
  3. salt 1/4 teaspoon
  4. curd 1 to 1.5 cup
  5. Green chillies 2 finely chopped ( add extra if required )
  6. Curry leaves chopped fistful
  7. hing 1/4 teaspoon
  8. onion small 1 finely chopped
  9. Sesame oil 1/4 cup
  10. Mustard seeds 1/4 teaspoon
  11. cumin seeds 1/2 teaspoon

Instructions

  1. Take 1/2 cup semolina in a wide bowl .
  2. Add 1 cup ragi/fingermillet flour to the semolina .
  3. Add 1 cup curd to the flour- semolina mixture .
  4. Mix thoroughly until there are no lumps . Add 1/4 teaspoon salt .
  5. Add 1 small onion finely chopped .
  6. Add chopped curry leaves and chopped green chillies as required . I used 2 chillies .
  7. Add 1/4 teaspoon hing to the batter . Adjust batter consistency adding extra curd if needed .
  8. Now heat 1 teaspoon oil for Tadka . Crackle 1/4 teaspoon mustard seeds, 1/2 teaspoon cumin seeds.
  9. Pour the tadka mixture to the batter and mix till it combines well . The batter shouldn’t be runny.
  10. Check pouring consistency . Rest batter 5 minsHeat a iron griddle . Brush griddle with sesame oil.
  11. Pour 1 ladle full batter and spread to medium sized Uthappam. Smear a teaspoon sesame oil. The tawa should be hot while pouring Uthappams for the perfect texture and colour .
  12. Once the lower side turns crispy , flip to another side . Now cook till light brown spots visible
  13. inner side . Repeat steps to cook rest of the Uthappams . Instant Ragi Uthappam is ready to serve .
  14. Serve it as it is if not with chutneys as preferred .
