  1. One cup semolina
  2. 1//4 th cup oil
  3. 1/4 th cup water
  4. oil for frying
  5. For pani:half cup Corriander leaves
  6. Half cup mint leaves
  7. Small piece of ginger
  8. 2 green chillies
  9. 3-4 tsp tamarind pulp
  10. salt as per taste
  11. sugar as per taste to make it sweet and sour
  12. 2 tsp jeera powder
  13. One litre water
  14. One medium size potatoes
  15. 3-4 tsp boiled moong dal(optional)

Instructions

  1. PANI PURI/ PUCHKA/GOLGAPPE BY RUCHIAJAY MAHANT
  2. ONE CUP SEMOLINA/SUJI/RAVA
  3. 1/4 TH CUP OIL
  4. MIX BOTH SUJI AND OIL
  5. ADD 1/4 TH CUP WATER IN SMALL PORTION TO KNEAD DOUGH.LET IT REST FOR 20 MINUTES.
  6. AFTER 20 MINUTES AGAIN KNEAD IT FOR FEW MINUTES TILL IT'S SMOOTH...NOW DIVIDE IN SMALL BALLS
  7. PRESS EACH BALLS IN HAND AND THEN ROLL DOWN IN ANY SHAPE .I PREFERED OVAL SHAPE
  8. MAKE FEW TOGETHER
  9. HEAT OIL AND FRY 3-5 AT A TIME, AT MEDIUM FLAME.TILL THEY ARE CRISP AND GOLDEN FROM BOTH SIDES
  10. COLLECT THEM AND LET IT COOL FOR 2 HRS
  11. YOU CAN HAVE IT PLAIN OR CAN ADD FILLING OF MASHED POTATOES AND MOONG DAL ALONG WITH SALT,PEPPER
  12. FOR PANI.GRIND MINT,CORRIANDER LEAVES,GREEN CHILLI,GINGER,SALT,JEERA,IMLI PULP,SUGAR.TO IT ADD WATER
  13. NOW REFRIGERATE PANI FOR 6 HRS AND THEN STRAIN IT AND SERVE IT .
