Ingredients Serving: 2

  1. For The Rajma Tikkis
  2. 1 cup soaked and boiled Rajma, lightly mashed
  3. 1/2 cup boiled, peeled and mashed Potatoes
  4. 1/4 cup Crumbled Paneer
  5. 3/4 cup Onions, chopped
  6. 1 1/2 tsp Chilli Ginger Paste
  7. 1/4 tsp Turmeric Powder
  8. 2 tbsp Chopped Coriander
  9. 3/4 tsp Garam Masala
  10. Salt
  11. 3 tbsp Cornflour
  12. Cornflour for coating
  13. 2-3 tsp Oil for Roasting Tikkis
  14. TO GARNISH
  15. 1/2 cup Grated Carrot
  16. 2-3 tsp campus Finely chopped
  17. Chopped cabbage
  18. Butter to Spread on Roti
  19. Chaat Masala to taste
  20. Rotis
  21. Mayonnaise
  22. Tomato sauce

Instructions

  1. Pressure cook Rajma with 1 1/2 cups water. If cooking on low flame, let cook for 4 whistles.
  2. Heta ghee in a pan and add ginger-chilli paste. Saute for 20 secs.
  3. Add the rajma, potatoes and garam masala.
  4. Add the turmeric powder, coriander and salt. Mix well and cook on medium flame for 3-4 mins while stirring continuously.
  5. Add paneer cubes.
  6. Let cool and add the cornflour. Mix well.
  7. Divide the mixture into equal portion and shape into oval tikkis.
  8. Roll each tikki in cornflour until well-coated.
  9. Heat a pan and add 1-2 tsp oil. Place tikkis on pan and roast on medium-slow flame.
  10. Flip when side is light brown in colour. Tikkis are ready.
  11. Combine carrots, capsicum, cabbage and chaat masala in a bowl. Add coriander powder, mix and keep aside.
  12. Apply some butter on a roti. Apply tomato sauce and spread grated cheese on it.
  13. Place 2 tikkis on it. Spread 1 tbsp mayonnaise over it.
  14. Arrange carrot, cabbage and capsicum mixture on it.
  15. Roll it and seal with a toothpick.
  16. Roast on a pan for a few seconds. Serve.
