ABOUT Paal Poli RECIPE

A traditional delicacy of South India . I learnt this recipe from my mom , who is a dedicated home chef. Children love enjoying this yummy dessert .

Ingredients Serving: 10

  1. All purpose flour / Maida 240 grams
  2. Sooji 1 ladleful
  3. Salt a pinch
  4. Turmeric powder 1/2 teaspoon
  5. Ghee 1 teaspoon for the dough
  6. Ghee / Oil for deep frying
  7. Milk 4 big glasses
  8. Cardamom powder 1 teaspoon
  9. Almonds 10 chopped
  10. Cashews 10 chopped
  11. Pistachios 10 for garnishing
  12. Saffron strands 3 soaked in a ladleful of milk .
  13. Palm candies 3 tablespoons

Instructions

  1. Take 240grams Maida . Add a pinch of salt , 1/2 teaspoon of turmeric . 1 teaspoon ghee .
  2. and 1 ladleful sooji in a bowl . Knead all together using little water into a soft poli dough .
  3. Cover the dough . Allow the poli dough to rest for an hour minimum.
  4. Take 4 glasses of full fat milk in a sauce pan .
  5. Boil the milk .
  6. Add 3 tablespoons palm candies ,a teaspoon of freshly ground Cardamom to the boiling milk .
  7. Keep stirring the milk occasionally . Add the saffron induced milk , chopped almonds and cashews .
  8. Boil the milk till it reduces to half .
  9. Now make small balls ought of the poli dough and roll into thin polis.
  10. Fold the rolled thin poli. Connect left end with right end .
  11. Heat ghee/ oil for deep frying the polis . Drop in the polis and fry either sides .
  12. The oil needn’t be too hot . The polis should look yellow and mustn’t look dark , crusty.
  13. Drain the excess oil / ghee and drop the fried polis into the hot flavoured milk .
  14. Milk must be simmering while the polis are added . Let the polis soak for 2 minutes . Flip sides.
  15. Switch off the milk after all the polis are added . Serve the soaked polis with the thick flavoured
  16. milk poured over the polis . Enjoy !
