Raw mango pieces matured with Jaggery with aromatic fennel seeds, coriander seeds and fenugreek seeds.

Ingredients Serving: 10

  1. Raw mangoes 500 gm
  2. Salt 20 gm
  3. Jaggery 500 gms
  4. Red chilli powder 1/2 tesp
  5. Turmeric powder 1/4 tesp
  6. Fennel seeds 1 tesp
  7. Coriander seeds 1 tesp
  8. Fenugreek seeds 1/4 tesp

Instructions

  1. CUT HALF KG RAW MANGOES IN DESIRED SIZED PIECES.
  2. ADD 30GM SALT. TOSS. LEAVE OVERNIGHT TO MARINATE.
  3. STRAIN MARINATED MANGO PIECES.
  4. RETAIN THE SALT WATER FOR LATER USE.
  5. SUN DRY STRAINED MANGO PIECES FOR 3-4 HOURS.
  6. IN A WOK HEAT SALT WATER AND JAGGERY TILL JAGGERY DISSOLVES.
  7. DRY ROAST 1 TESP EACH OF FENNEL SEEDS AND CORIANDER SEEDS WITH 1/2 TESP FENUGREEK SEEDS.
  8. CRUSH ROASTED SPICES COARSELY.
  9. WHEN JAGGERY DISSOLVES COMPLETELY ADD MANGO PIECES.
  10. COOK TILL SINGLE STRAND CONSISTENCY.
  11. ADD 1/2 TESP RED CHILLI POWDER, 1/4 TESP TURMERIC POWDER AND GROUND SPICES.MIX WELL. SET THE FLAME OFF.
  12. COOL COMPLETELY AND FILL IN CLEAN JAR.
