Pav bhaji is the best recipe to use up any of your leftover vegetables. Also you don't have to beg kids to eat vegetables. Here you can use any leftovers ie any dry vegetables, chole, bharta, aloo matar etc. It's not only easy to make but more delicious too.

Ingredients Serving: 5

  1. Onions 2
  2. Tomatoes 3
  3. Leftover vegetables 2 cups
  4. Oil 1 tesp
  5. Butter 2 tbsp
  6. Salt to taste
  7. Red chilli powder 1/2 tesp
  8. Pav bhaji masala 2 tbsp
  9. Green coriander leaves to garnish
  10. Pav buns to serve


  1. Finely chop onion.
  2. Puree tomatoes.
  3. Mash leftover vegetables nicely. ( any dry vegetables, chole, bharta, aloo matar etc).
  4. Heat oil and 1 tbsp butter.
  5. Add onions and saute till golden brown.
  6. Add tomatoes cook until oil oozes out.
  7. Add salt, red chilli powder and Pav bhaji masala with 1/4 cup of water.
  8. Give a boil and add mashed vegetables. Mix well.
  9. Add more butter, cover and let it simmer for 6-8 minutes.
  10. Take off heat.
  11. Garnish with green coriander and lemon juice.
  12. Serve with buttered pav buns.
