ABOUT Jacket potato pav bhaji RECIPE

#fusion. This is a lovely fusion where flavourful bhaji is stuffed in a jacket potatoes instead of serving it in usual way with buttered buns.

Ingredients Serving: 4

  1. For jacket potato-
  2. 4 medium size Potatoes
  3. 2 tbsp Butter
  4. Sea salt as required
  5. For bhaji-
  6. 1 cup peeled potato peices
  7. 1/2 Cup Green Peas
  8. 1/2 carrot
  9. 1 small piece of cauliflower
  10. 1 Capsicum
  11. 2 tomatoes chopped
  12. Juice of a lemon
  13. 3 tbsp pav bhaji masala
  14. other ingredients -
  15. 1 tsp chat masala
  16. 1 tbsp oil
  17. 3 tbsp butter
  18. Salt
  19. 1 tbsp grated cheddar or mozzarella cheese
  20. Chopped coriander leaves to sprinkle
  21. Chopped onion to garnish
  22. Lemon pieces and juice

Instructions

  1. Wash potatoes for making jacket potatoes, use a knife to poke all over.
  2. Apply soft butter and rock salt.
  3. In a preheated oven bake them for 30 minutes at 180 degrees
  4. Once cool cut them lengthwise, scoop them out carefully
  5. Except tomatoes and capsicum, pressure cook rest of the vegetables after choppibg them with 1 cup of water. Potatoes should be peeled, and cubed before boiling.
  6. Mash boiled vegitables with a masher.
  7. Heat up oil and 1 tbsp butter, add chopped tomatoes, fry till soft, add pav bhaji masala reserving 1 tsp for later
  8. Add chopped capsicum and salt. Fry for few minutes
  9. Add boiled vegitables, mix it well and let it cook, add water if needed.
  10. When its ready add some butter and lemon juice, bhaji should be thick, this will be (filling 1)
  11. In a bowl take potato pulp that you scooped out of jacket potato
  12. Add chat masala, chilli powder, pav bhaji masala, some butter and lemon juice. Keep this mixture aside(filling 2)
  13. Fill bhaji (filling 1)in half of the prepared jacket potatoes, top it up with some grated cheese and little butter
  14. In remaining jacket potatoes, pav bhaji masala falvoured potatoes(filling 2) will go in. Top it up with some grated cheese too.
  15. Bake all these for 10 minutes, or till the butter and cheese will start melting. its ready to serve. For the plating add some coriander and finely chopped onion and a pinch of pav bhaji masala over the top.
  16. This tastes absolutely delicious.
