ABOUT poori bhaaji RECIPE

Poori Bhaaji is a combination of two dishes served together. Whole wheat flour deep fried flaky bread called puris and medium spiced boiled potato curry called bhaji. Puribhaji is a versatile wholesome breakfast dish that is quite popular across India. You would not miss this dish in any restaurant’s breakfast menu. In North India, puribhaji gravy recipe is must for breakfast. A lot of small eating joints across the cities serve this heavy breakfast dish every morning. Puribhaji is also a street food recipe served as street snack in central India. Those who have traveled in Indian railway would have definitely noticed puribhaji served on railway station platform especially in North India.

Ingredients Serving: 3

  1. for poori :
  2. whole wheat flour one bowl
  3. water as needed
  4. oil or ghee one tbsp
  5. salt as needed
  6. sugar one pinch
  7. ajwain two tbsp
  8. for bhaaji :
  9. yellow split moong dal one medium bowl
  10. potato one large
  11. bottle guard 1/2 piece
  12. onion one large chopped
  13. carrot one or two pcs chopped
  14. mustard seeds 1/2 tbsp
  15. cumin 1 tbsp
  16. curry leaves 5-6
  17. green peas one small bowl
  18. green chillies two three pcs chopped
  19. tomato one large chopped
  20. garam masala one tbsp
  21. Dhanya powder 1 tbsp
  22. garlic 4-5 pcs
  23. turmeric powder 1/2 tbsp
  24. red mirchi powder 2 tbsp

Instructions

  1. Now to make Poori for Poori Bhaaji let us first make the dough for Poori.
  2. Sieve the whole wheat flour (gehu ka atta) in a large mixing bowl. Add salt,ajwain,sugar and oil in the wheat flour.
  3. Now while adding a little water at time start kneading dough for pooris. The dough should be of medium consistency not too soft not too hard.
  4. Knead the poori dough thoroughly and keep it aside to rest atleast for 10 minutes.
  5. preparation of bhaaji:
  6. Boil the vegetables and mash them. Heat a non stick pan and oil it, once oil is hot add Cumin seeds and Mustard seeds.
  7. Add curry leaves, Garlic, green chillies, onion, tomatoes and saute it for a minute.
  8. Add mashed vegetables, Garammasala, Salt, Red mirchi powder, Turmeric powder, Dhanya powder and add little water.
  9. Mix well and cover the pan with a lid. Let the curry gets cooked for 4-5 minutes on medium flame.
  10. Serve hot and add coriander leaves.
