This soup is an amazing recipe for the weight watchers. Yellow moong dal and vegetables together provide a good amount of fiber that keep us energetic and fuller for a long time that helps in reducing the intake of food often. This soup makes one of the best healthy foods for everyone of us including kids and toddlers, it is flavorful yet easy to make. So, here is the recipe for yummy DAL AND VEGETABLE SOUP

Ingredients Serving: 2

  1. Yellow moong dal/split moong dal 1/2 cup
  2. Chopped tomato 1 tbsp
  3. Sweet corn 1 tbsp
  4. Chopped cauliflower 1 tbsp
  5. Chopped carrot 1 tbsp
  6. Chopped spinach 1 tbsp
  7. Chopped onion 1 tbsp
  8. Garlic cloves 2
  9. Cumin seeds 1 tsp
  10. Butter 2 tsp
  11. Black pepper powder 1/2 tsp
  12. Salt according to taste
  13. Sugar 1/2 tsp
  14. Lemon juice 1/2 tsp
  15. Fresh cream for garnishing as needed
  16. Chopped coriander for garnishing as needed

Instructions

  1. Before we begin, check all the ingredients required to make tasty dal and vegetable soup.
  2. Heat butter in pressure cooker, add cumin seeds. When it starts crackle, add onion and garlic, saute for a minute. Then add all the vegetables and moong dal, mix well. Add 2 glass of water,cover it with a lid and cook for atleast 3-4 whistles.
  3. Let it cool down completely. Then blend it into a smooth puree.
  4. Heat a pan, add dal and vegetable puree, add some water if required, season it with salt and pepper. Add lemon juice and sugar, give it a nice mix. Cook for 1-2 minutes.
  5. Take this soup in a bowl and garnish with coriander leaves and some fresh cream. Serve hot.
