Amaranth leaves is a very nutritious green leafy vegetable and diabetic friendly too. This Amaranth leaves stir fry is a very simple recipe with simple and minimum seasoning. Just 5 ingredients amaranth leaves stir fry recipe.

Ingredients Serving: 3

  1. 150-200 gms amaranth leaves
  2. 2-3 Green Chilly chopped
  3. 4 Fat Galic cloves chopped
  4. salt to taste
  5. 1 tbsp oil

Instructions

  1. Wash the amaranth leaves thoroughly in water. Chop the leaves along with the tender stem. Chop green chillies and garlic too and keep aside.
  2. Heat oil in a pan. Add the chopped green chillies and garlic and saute for a min.
  3. Add the chopped amaranth leaves and season with salt. Mix well and stir fry for 10-12 mins.
  4. Your tasty and healthy amaranth leaves stir fry is ready to be serve. Enjoy it as a side dish with your meal.
