Ingredients Serving: 6

  1. For vada
  2. 2 cups chana Dal
  3. 1 big onion finely chopped
  4. 2-3 Green chilli finely chopped
  5. 1-2 tsp Ginger finely chopped
  6. 1/4 tsp Fennel seeds
  7. 1-2 sprig Curry leaves finely chopped
  8. 1/8 tsp asafoetida/hing
  9. Salt to taste
  10. For Chai Masala
  11. 1 inch cinnamon
  12. 5-6 green cardamom
  13. 4 cloves
  14. 2 inch ginger grated
  15. few peppercorns - optional
  16. 1/4 teaspoon fennel seeds
  17. For tea
  18. 5 cups water
  19. Sugar to taste
  20. 1 cup milk - adjust
  21. 6 teaspoon tea leaves


  1. For Vada : Clean and Soak chana dal for 2-3 hours. Drain the water completely
  2. Pat dry the drained dal with a clean kitchen towel. Grind the dal for a few seconds. Dal should be crushed and not be made into a smooth paste.
  3. Add all the other ingredients mentioned under vada to the dal and combine it gently.
  4. Heat oil in a deep pan for frying . Divide dal mix into equal portions. Wet your hands and flatten each ball within palms
  5. Drop vadas in hot oil and deep fry over low-medium heat, till it becomes crispy and a dark shade of brown. Drain the fried vadas on tissue paper
  6. Crush all the chai masala in mortar-pestle and keep it aside
  7. Bring water to boil , now add chai masala and boil for 2 minutes.Add tea leaves and boil for sometime depending on how strong you want the tea. Here I have made for 6 people hence the quantity is high
  8. Add sugar and milk. Let it boil for 2-3 minutes. Switch off. Strain the tea
  9. Serve the Vadas hot with steaming cup of Masala chai
