Ingredients Serving: 5

  1. 4 medium boiled potatoes
  2. 1 cup blanched spinach puree
  3. 2 medium onions chopped fine
  4. 2 medium tomatoes chopped fine
  5. half of a big capsicum chopped fine
  6. half cup green peas fresh or frozen
  7. 2 cups water + little more
  8. 1 large green chilli
  9. 8 to 9 garlic cloves
  10. Spice powders:
  11. half teaspoon red chilli powder
  12. one teaspoon coriander cumin powder
  13. quarter teaspoon turmeric
  14. 2 teaspoon pav bhaji masala
  15. 2 tbsp Amul butter
  16. 2 tbsp oil
  17. salt for seasoning
  18. for garnishing:
  19. 200 grams chopped coriander
  20. 2 large onions chopped fine
  21. tomato slices
  22. lemon wedges
  23. Amul butter
  24. pav buns as required

Instructions

  1. blanch the spinach
  2. Strain and run under cool water
  3. grind to a fine paste
  4. Add green chillies and garlic cloves together in a jar
  5. grind to a fine paste with 2 tablespoons of water
  6. frozen green peas
  7. chop capsicum finally
  8. boil and peel potatoes
  9. mash them well
  10. keep chopped onions and tomatoes ready to use
  11. add oil to a pressure pan
  12. saute the chopped onions
  13. add the garlic Chilli paste and saute further
  14. now add the chopped capsicum and saute
  15. at Greenpeas, 2 tbsp water and pressure cook for two vessels
  16. add chopped tomatoes
  17. add the spice powders and salt except pav bhaji masala
  18. mash with a masher as its cooking
  19. add the pav bhaji masala
  20. Add the boiled and mashed potatoes and continue mashing with the Masher
  21. now add the spinach puree
  22. add two cups of water
  23. add a blob of butter and simmer and cook for 10 minutes
  24. squeeze half a lemon
  25. nicely cooked and simmered
  26. Toast the pavs with generous amount of butter on a hit tawa.
  27. Garnish with freshly chopped onions freshly chopped coriander,a blob of butter ,lemon wedges, tomato slices and butter toasted pavs
