Ingredients Serving: 2

  1. Boiled potatoes 2
  2. Brinjal with cleaned inside
  3. Salt to taste
  4. Gonger , garlic and chilli paste 1 tablespoon
  5. Garam masala some
  6. A pinch of black pepper
  7. Chopped mint leaves 2 sprigs
  8. 1onion finely chopped
  9. For tomatoe chutney
  10. 2 tomatoes
  11. 1 tablespoon oil
  12. Salt to taste
  13. Sugar 1 tablespoon
  14. Chaat masala a pinch


  1. Take a bowl add potatoes , onions , salt , mint leaves and all the spices...mix well
  2. Then take a brinjal cut into circles and clean the inner portion
  3. Then fill the potato filling into the brinjals and microwave for 20 minutes at 200 degree celcius
  4. Take them out and place on a plate pour some chutney and onions on them
  5. Decorate with mint leaves
  6. Serve hot
