ABOUT Jain Vegetable rice RECIPE

simple and nutrient one pot quick meal recipe made with rice and choice of veggies. it is a perfect quick lunch box recipe and can be made in jiffy during those busy and peak morning rush hours. it tastes great when served with choice of raita yoghurt dip or even choice of dal recipe, but tastes great with itself.

Ingredients Serving: 5

  1. 2 cups rice(soaked for 20mins)
  2. 2 tsp oil
  3. 1 bay leaf
  4. 1 inch cinnamon stick
  5. 2 cardamom
  6. 2 green chillies slit
  7. 10 beans chopped
  8. 2tbsp peas
  9. 1 small capsicum chopped
  10. 4 cups water
  11. Salt as per taste
  12. 2 tsp Lemon juice
  13. Coriander leaves

Instructions

  1. Wash and soak the rice for 20 mins. I have used sona masuri, you can use basmati rice also.
  2. Take a pressure cooker heat 2tsp oil and saute bay leaf, cinnamon stick, cardamom until they turn aromatic. Add green chillies later.
  3. Further add chopped beans, peas and chopped capsicum. Store fry vegetable for 2mins. Don't overcook.
  4. Now add soaked rice along with 4 cups of water, salt and lemon juice.
  5. Mix well and pressure cook for 3 whistles on medium flame.
  6. After the pressure is gone open the lid and add chopped coriander leaves and mix the rice without breaking the grain.
  7. Enjoy the vegetable rice with raita or Shorba(biryani gravy).
