ABOUT Leftover steamed Rice Chivda RECIPE

Leftover steamed rice is dried,deep fried and then spiced up to make this unusual Chivda. The resultant crunchy,spicy Chivda is deliciously addictive and a great change from the usual poha or murmura chivda. Steamed rice can be dried in the sun or use the microwave to speed up the drying process. This recipe uses the basic spices for flavouring. Addition of ready mixes like chutney podi or Maharashtrian Metkut or chivda masala amps up the flavour & taste.

Ingredients Serving: 2

  1. 2 cups leftover steamed rice (preferably fluffy and separated grains)
  2. handful of groundnuts
  3. 3 tablespoon roasted chana dal (dalia/phutane)
  4. 1 tablespoon mustard seeds
  5. 1 tablespoon cumin seeds
  6. 2-3 teaspoons sugar
  7. 10-12 curry leaves
  8. 1/2 teaspoon hing(asafoetida)
  9. 1 tablespoon coriander seeds,roasted and crushed
  10. 1/2 teaspoon Turmeric powder
  11. 1/2 tablespoon chili powder (or to taste)
  12. handful of readymade sev
  13. Oil for Deep frying
  14. Salt to taste

Instructions

  1. Sun Dry the rice till all the moisture evaporates. Or microwave for 5-6 minutes in bursts, stirring in between. Timing may change depending on the microwave.
  2. Heat oil in a wok for deep frying.
  3. Add some of the dried rice to a small fine mesh sieve (chalni)
  4. Dip the sieve in the hot oil and fry till the rice turns golden.
  5. Place on an absorbent paper to drain excess oil
  6. Fry the groundnuts and roasted chana in the same wok and add to the fried rice.
  7. Heat 3-4 tablespoon of the above oil in a small pan
  8. Add the mustard seeds.
  9. Once they splutter add the cumin seeds,curry leaves,hing,turmeric powder,red chilli powder, coriander seeds
  10. Add this tempering to the fried rice+groundnuts+roasted chana in large mixing bowl.
  11. Add salt,sugar, sev and carefully mix everything.
  12. Store in an airtight container
