ABOUT Besan ke laddu RECIPE

We never buy laddus from the market but always make them at home on festivals and occasions. These laddus are sooo easy and yummy! Try them out...!! Besan Ke Laddu is a delicacy from Rajasthan. Besan Ke Laddus are round balls prepared using roasted gram flour with a generous amount of ghee. In Rajasthan, it is considered auspicious to make Besan Ke Laddu on occasions such Holi, Diwali, Weddings etc. It is also a must in the menu during weddings specially taking place during the winter season. In India, laddus are prepared in a very unique way.The aroma that arouses while cooking the flour for the laddus is just commendable. The recipe uses roasted gram flour, ghee, sugar and almonds. It is mostly yellowish orange in color due to kesar present in the laddu which gives it a very tempting appearance. The Besan Ke Laddu are garnished with chopped nuts giving it a very traditional yet tempting look.

Ingredients Serving: 4

  1. 2 cups besan
  2. 1/2 cup ghee plus little for greasing
  3. 3/4 cup powdered sugar(you can adjust according to taste)
  4. 3-4 green cardamoms(remove seeds and crush discard outer cover)
  5. handful of slivered pistachios for garnishing

Instructions

  1. Heat ghee in a heavy pan and add besan to it, keep stirring till the besan turns light brown in colour on a low flame, this part is most important and should take you half an hour at least, since we need to slow roast the besan.
  2. You can also roast besan first then add ghee later.Keep stirring till the ghee starts separating from the besan and you get the delicious aroma of besan roasting filling up your kitchen! Turn off flame and let cool a little.
  3. Now add sugar and cardamom seeds to the mixture and keep mixing continously so that the mixture does not stick to the bottom of the pan.Switch off the flame.
  4. Let the mixture cool for sometime.Make small ladoos with greased palms(grease with some desi ghee) while mixture is still warm. Garnish with the slivered pistachios, just stick them in!.Serve immediately for a really soft melt-in-the-mouth experience of these laddus or store in airtight containers, laddos will remain good for weeks!
  5. In case you experience difficulty in shaping the laddus, that is if they are too dry then add a tablespoon of melted ghee, then shape.
  6. In case the laddus are too sticky then refrigerate for 10 mins and then shape.
  7. Delicious slow roasted besan laddus are ready for your friends and family to enjoy!!
