These granola bars are chewy and crispy and also a healthy snack that your kids will love.

Puffed rice granola bar

Ingredients to make Puffed rice granola bar

  • 300 grams puffed brown rice or puffed cereal
  • 100 grams almonds/walnuts toasted and finely chopped
  • 200 grams rolled oats toasted
  • 125 ml golden syrup/honey
  • 60 ml peanut butter
  • 1/4 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 20 gram flaxseeds grounded
  • A pinch of salt

How to make Puffed rice granola bar

  1. Preheat the oven to 170 degrees celsius. Also line the baking tray with parchment paper.
  2. Take a pan and lightly toast the nuts and rolled oats for 10-15 minutes until they are fragrant. Then keep aside to cool.
  3. In a separate bowl, pour in the honey/syrup along with the vanilla extract, peanut butter, flaxseed, and salt. Stir this mixture well.
  4. Blend the chocolate chips, rolled oats, nuts, puffed rice together.
  5. Next add the dry ingredients into the honey/syrup mixture. Stir well till the syrup is evenly spread. Carefully pour this mixture onto the parchment paper on the baking tray.
  6. With the help of a rolling pin, flatten this mixture to a thickness of 1/2 inch and shape it into a rectangle.
  7. Bake at 170 degrees celsius for 12-15 minutes. Once it is cooked, let it rest for 10 minutes.
  8. Cut into bar shapes while it is still warm with the help of a knife. You can also store in an airtight container and keep it for 5-6 days.
  9. Serve these tasty bars as a delicious and healthy snack for your kids.

it turned out good... but the honey and peanut butter were not enough for this quantity.. i had to use just a handful of puffed rice (kurmure). by mistake i baked it for 23 mins...and it turned v crunchy and could not be cut in bars... but on the whole it ws tasting good.
