An easy vegetarian version of Royal Awadhi Galaouti Kebab. Too moist and delicious in taste.

Ingredients Serving: 4

  1. Red Kidney Beans 2 cups
  2. Caahew Nuts 15
  3. Sunflower seeds 2 tbsp
  4. Poppy seeds 2 tbsp
  5. Green cardamom 8
  6. Black cardamom 6
  7. cloves 4
  8. cinnamon 2 inch Stick
  9. saffron 1 tbsp
  10. kewra water pinch
  11. ghee to shallow fry
  12. garlic and ginger paste 1 tbsp
  13. Green chillies 1 tbsp
  14. Khoya grated 8 tbsp
  15. salt as per taste
  16. For Sheermal:
  17. saffron strands 1/4 tsp
  18. maida 1 cup
  19. ghee 1/4 cup
  20. sugar 1/4tsp
  21. Baking powder 1tsp
  22. elaichi powder 1tsp
  23. salt to taste
  24. Milk 1/2 cup
  25. ghee
  26. For Dhaba Salad:
  27. cabbage leaves few
  28. carrot sliced few
  29. onion rings few
  30. mint leaves to garnish
  31. sugar 2 tbsp
  32. salt Pinch
  33. lemon juice 2 tbsp
  34. Red chili powder 1 tsp
  35. Chat masala 1 tsp

Instructions

  1. Soak rajma overnight. Boil in sufficient quantity of water until soft. Drain and set aside.
  2. Dry roast cashews, sunflower seeds, and poppy seeds.
  3. Grind it to paste adding water.
  4. Dry roast all masala and grind to fine powder.
  5. Soak saffron in kewra water.
  6. Heat 2 tbsp of ghee in a pan. Add ginger garlic paste and green chilies.Saute. Add in Rajma and cook for 5 minutes.
  7. Add in Kaju paste and stir for 5 minutes. Add khoya, white pepper and salt.
  8. Remove from heat. Cool and mash rajma to smooth paste. Sprinkle powdered spices and soaked saffron.
  9. Divide mixture into equal balls and press them lightly.
  10. Heat ghee in a pan and shallow fry kebabs until light brown.
  11. Procedure of making Sheermal
  12. Sheermal is a mildly sweet saffron flavored naan.
  13. Combine the saffron and hot water.. mix well and keep aside
  14. Combine plain flour, ghee, sugar, baking powder, salt, cardamom powder, saffron water mixture and knead a soft dough using milk.
  15. Let dough rest for 30 minutes
  16. Make a small round shape and cook it on Tawa on both adding ghee.
  17. Brush with ghee and serve hot with kebab.
  18. Dhaba Salad:
  19. Add all the ingredients and mix it well in a bowl
  20. Keep it in the fridge for half an hour
  21. Serve with Sheermal and kebab
