Ingredients Serving: 10

  1. Urad dal chilka - 250grams
  2. Cumin seeds - 1tsp
  3. Ginger - 1inch piece grated
  4. Asafoetida - 1tsp
  5. Red chilly powder - 2 tsp
  6. Garam masala - 2 tsp
  7. Green chilies - 2tsp chopped
  8. Coriander leaves - 1/2cup chopped
  9. Oil for moyan - 1/2cup
  10. Maida - 1/2 kg
  11. Semolina - 2tbsp
  12. Salt to taste
  13. Oil for frying


  1. Soak urad dal for 11/2 hours. Once the dal is soaked wash and rub to remove the skin as much you can. Now coarsely grind dal with ginger n green chilies.
  2. Heat 1tsp oil and put cumin seeds and asafoetida. When the spices splutter add dal, salt, red chilly powder, garam masala to it. Keep roasting the dal with masalas for 8-10 minutes on slow heat or till Dal leaves the edges and gives a nice aroma.
  3. Keep aside this filling for cooling.
  4. Knead a smooth dough by mixing maida, semolina, a little salt, moyan and water. Keep this dough covered for 1/2hour.
  5. Now make small balls of filling and a little larger ball from the dough. Pat the flour dough ball on your palm and fill it with dal ball. roll it in your hand to make the outer covering smooth.
  6. Keep making these masala filled balls till you are done with the material and keep them covered. Take a thin rolling pin and roll your kachori one by one.
  7. Keep frying till they turn out beautiful golden brown.
  8. Serve them with mint chutney or any sweet sauce / chutney.
