ABOUT Bhindi Chilli Fry RECIPE

It's a Keralite Restaurant style recipe , I order it often as I like it very much , because it tastes so homely with less spices

Ingredients Serving: 3

  1. Bhindi 400 gms
  2. Onion 2 big , sliced
  3. Potato 1 cubed optional
  4. Red capsicum 1
  5. Green chilli chopped 4_5
  6. Curry leaves a handful
  7. Garlic pods chopped 4
  8. Ginger crushed 1/2 tsp
  9. Curry powder 1 tsp
  10. Turmeric powder 1/2 tsp
  11. Chilli powder 1/4 tsp
  12. Salt
  13. Asafoetida a pinch
  14. Coriander leaves chopped for garnishing

Instructions

  1. Wash and cut ladies finger in 2 pieces or in rings
  2. Cut potatoes in thin pieces
  3. Cut onions in thin slices
  4. Heat oil , add black mustard seeds , when spluttered add curry leaves
  5. Next add potatoes ,stir fry them for 3_4 mins
  6. Add turmeric powder , curry powder , chilli powder and salt
  7. Add chopped green chilli
  8. Saute for 2_3 mins
  9. Now add bhindi
  10. Cover and cook for 7_8 mins
  11. Stir in between , don't burn them
  12. Now add chopped tomato and 3_4 tsp water
  13. Cover and cook for 3_4 mins
  14. Add capsicum , again cover and cook for 3_4 mins
  15. Stir and mix carefully
  16. Add hing
  17. Check for salt
  18. Garnish with fried chilli , curry leaves and fresh coriander leaves
  19. Serve hot with rice or roti
