Carrot Kulfi

Ingredients Serving: 4

  1. 250 g grated carrot
  2. 1/2 litre milk
  3. 4-5 chopped almonds
  4. 3-4 chopped cashew nuts
  5. 4tsp of ghee
  6. 2 Elaichi crushed
  7. 60g of Melted chocolate 
  8. 1tsp custard powder
  9. 1/2 cup condensed milk
  10. 2tssp sugar

Instructions

  1. Take a pan and pour ghee then add the grated carrots and fry on a medium flame till a nice colour is seen.
  2. Now add condensed milk to this and stir well
  3. Let it cook until it is totally dry and then add crushed Elaichi and stir well, keep aside.
  4. Now take silicon moulds and stuff a hollow layer of this carrot and keep it into the freezer until it is hardened 
  5. Now start boiling milk in another pan. Once the milk starts to boil take a spoon full of milk and add that to custard powder and keep aside.
  6. Boil the milk until it is reduced by 50% and add sugar.
  7. Keep stirring the milk and then add the custard powder that is mixed with a sponsor of milk and stir it such that there is no lumps formed
  8. Now add nuts to the custard and turn off the heat. Let it cool
  9. Once custard is cooled get the silicon moulds out and then pour the custard in the deep hollow and put it back into the freezer until it is hardened
  10. When totally hardened get it out of the freezer and take the kulfi out of the mould.
  11. Flip the kulfi over and drizzle a good amount of melted chocolate It's time to serve now.
