ABOUT Multigrain Onion Vada RECIPE

Vada or Chicken vada is a popular dish of Maharashtra. In Maharashtra vadas are prepared kneading different flours together into a dough and then deep fried till golden brown; are served mainly with chicken dishes. Vada is one of the dish which usually been prepared in Ganpati festival. In this recipe, I have used multigrain flour, Onions, some masalas, fenugreek powder to give nice aroma to the vadas.

Ingredients Serving: 6

  1. Finger millet or Ragi Flour– ½ cup
  2. Bajra or Pearl Millet flour – ½ cup
  3. Rice flour – ½ cup
  4. Wheat Flour - 1/2 Cup
  5. Urad dal (Split black lentils) flour – 2tbsp
  6. Onion medium – 3 chopped
  7. Green chilies – 3-4 roughly chopped
  8. Red Chili powder – 1 tsp
  9. Cumin Powder – ½ tbsp.
  10. Coriander Powder – 1tbsp
  11. Fenugreek powder – ½ tsp
  12. Asafoetida – 1/4th tsp
  13. salt as per taste
  14. Water as required for kneading
  15. Oil for frying

Instructions

  1. Blend onions and green chillies in a blender into fine paste. Add water if required.
  2. In a bowl mix all flours; add prepared onion paste; add Asafoetida, cumin, coriander powder, red chili powder, Fenugreek powder, and salt.
  3. Knead into a smooth dough adding little water at a time. Keep aside for an hour or two.
  4. Heat oil in a wok or Kadai.
  5. Grease hands with oil. Take small portion of dough and make a ball. Place muslin cloth or cling wrap on rolling board or plate. Grease it with little water or oil. Place a ball and pat it evenly from all the sides. It should be little thick.
  6. Make hole in the center to get it cooked evenly. It's an optional.
  7. Fry vadas on medium low flame from all the sides till golden brown
  8. Serve hot with any main dish or with hot tea.
