No onion No garlic-Baingan aloo ke sabzi

This curry can be made during fasts as well as there is no usage of onion or garlic, a perfect brinjal and potato curry to be served with rotis.

Ingredients Serving: 6

  1. Baingan [brinjal] 1/2 kg small
  2. Potato 6-8 small
  3. Mustard seeds 1tsp
  4. Fennel seeds 2tsp
  5. Cumin seeds 1tsp
  6. Red chilli powder 1 + 1/2 tsp
  7. Turmeric powder 3/4tsp
  8. Coriander powder 2tsp
  9. Salt to taste
  10. Chaat masala 1tsp
  11. Garam masala 1 tsp
  12. oil
  13. Amchoor powder 11/2tsp


  1. Wash brinjal and potato .
  2. Peel the potato and make +sign cut in both brinjal and potato so that it remains intact
  3. Roast fennel cumin and musturd seed and grind it to make powder
  4. Add the above masala mix with all the other spices and salt .
  5. Fill it in the potatoes and brinjals nicely
  6. Rest of the masala can be kept aside.
  7. Now in a pan heat oil ,crackle cumin seeds.add potatoes and brinjals in it.
  8. Let them get cooked until half done.
  9. Add the rest masala in it and cook the brinjal and potato completely
  10. This is ready to be served
