Ingredients Serving: 4

  1. Lady fingers(Bhindi) 400 gm
  2. Tomato medium 1 chopped
  3. Asafoetida- a pinch
  4. For bhindi stuffing:
  5. Coriander powder 4 heaped tsp
  6. Red chilli powder 1 tsp
  7. Turmeric powder 1/2 tsp
  8. Amchur powder 1/2 tsp
  9. Salt 3/4 tsp (adjust according to taste)
  10. Garam masala powder 1/4 tsp
  11. For Panch Puran spices:
  12. Fenugreek(methi) seeds 1/4 tsp
  13. Fennel seeds 1/2 tsp
  14. Cumin seeds 1/2 tsp
  15. Mustard seeds 1/2tsp
  16. Nigella seeds 1/2 tsp
  17. Oil for cooking 3 tbsp


  1. Wash and pat dry the lady fingers
  2. Remove the tips and slit them
  3. Mix the dry spices for the stuffing as mentioned.
  4. Stuff the lady fingers with this spices-powder
  5. Take a flat bottom pan or karahi and heat oil in it.
  6. Tip in the Panch Puran whole spices and let them splutter.
  7. Add a dash of asafoetida.
  8. Then add the stuffed lady fingers and stir fry for two minutes.
  9. Add the chopped tomatoes and stir fry on medium flame for two minutes.
  10. Cover pan, reduce flame and cook for ten minutes
  11. Serve hot with rice or rotis.
