Baigan ka bharta

Ingredients to make Baigan ka bharta

  • Bringals- 2pcs(big and black)
  • oil- 2tbsps
  • Chopped onion- 1cup
  • Chopped ginger- 1tspn
  • Chopped garlic- 1tspn
  • Chopped tomatoes- 1cup
  • methi- 1tspn
  • hing- 1tspn
  • coriander powder- 1tspn
  • turmeric powder- 1tspn
  • cumin powder- 1tspn
  • salt
  • sugar- 1tbspn
  • red chilli powder- 1tspn
  • Green chili- 5pcs
  • Fresh coriander leaves
  • Burning coal- 1pc
  • ghee- 1tbspn

How to make Baigan ka bharta

  1. Wash the bringal and make some slit
  2. Bush some oil on it and roast it on gas oven
  3. After roasting it allover let it be cool down and remove all skin of it
  4. Now smash it well
  5. Now heat up a wok and add oil
  6. Add methi to it and when the oil got well flavoured with methi remove it and add a little hing
  7. Now add onion and fry well till become brown
  8. Add ginger garlic and tomato
  9. Sautéed it well
  10. Add bringal paste to it and fry well
  11. Add all the powdered spices, salt and sugar and mix it well
  12. Fry till oil starts coming out
  13. Turn off the flame
  14. Now take a small bowl and take the burning coal in it and ghee to it
  15. Now place that bowl in the wok and cover it with a lid and leave it for 5min
  16. Now remove it and garnish with green chili and coriander leaves
  17. Cover the lid and give it a standing time of 10mins
  18. Serve hot with Paratha and butter

My Tip:

For better flavour use only mustered oil
