I have prepared a main dish couscous, mushrooms, peas and flavoured with coriander and mint .It is one of my favourite dish .Couscous is very easy to cook ,nutritious, economical and also filling.

Ingredients Serving: 2

  1. Precooked couscous 1/2 cup
  2. Mint leaves 1/2 cup chopped
  3. Fresh coriander leaves 1/4 cup chopped
  4. Mushroom 2 cups
  5. Onion 1 cup thinly sliced
  6. Green chillies 2 slit
  7. Ginger-garlic paste 1 tsp
  8. Fresh peas 1cup
  9. Salt to taste
  10. Turmeric powder 1/4 top
  11. Red chill powder 1/2 tsp
  12. oil 2 tbsp
  13. Cinnamon 1 inch piece
  14. Cloves 2


  1. Boil 1 cup of water with a little salt and pour it over the couscous. Keep it covered. Let it sit for 10 minutes. After 10 minutes, fluff couscous with a fork. Couscous is ready .
  2. Slice onions thinly. Wash and chop coriander and mint leaves . Keep it aside.
  3. Boil peas with a little salt.
  4. Wash, clean mushrooms and cut it into 2 or 3 pieces.
  5. Heat oil in a pan, add cinnamon and cloves. Saute for a few seconds and then add onions and green chillies. Saute until onions turn transparent. Add ginger and garlic paste and Saute for a few more minutes.
  6. Add mushrooms, salt and turmeric powder. Cook until tender.
  7. Add boiled peas and mix well.
  8. Add mint,coriander leaves and cook until they wilt.
  9. Add chilli powder and fluff couscous and cook for few more minutes.
  10. Mix well and serve hot with any salad. Enjoy!!
