ABOUT Matachi Bhaji RECIPE

Hirvya Matachi bhaji or Green amaranth leaves subji is a common side dish in India. It requires less ingredients and tastes amazing with hot chapati, dal rice or roti. I have used fresh grated coconut and roasted crushed peanuts to enhance the taste and crunchiness. This is our traditional recipe. A very healthy option as a side dish and can be prepared and eaten throughout year.

Ingredients Serving: 4

  1. Green Amaranth/ green Math/ green Chaulai leaves – 2 cups finely chopped
  2. 2 small Onions chopped finely
  3. Garlic cloves crushed– 3-4
  4. Green chili slit– 2-3
  5. Oil – 2 tbsp
  6. Salt - as per taste
  7. Grated coconut – 2 tbsp.
  8. Crushed roasted peanuts – 1 tbsp

Instructions

  1. Heat oil in a nonstick pan
  2. Add finely chopped onion, salt. Cook till translucent.
  3. Add crushed garlic, green chili. Cook till raw aroma goes away.
  4. Add green Amaranth leaves. Stir well and cook for 3-4 minutes. Do not close the lid while cooking. Tender leaves with tender stems get cooked faster. Do not overcook.
  5. Cook until water evaporates
  6. Add fresh grated coconut and roasted peanuts. Mix well.
  7. Serve hot with chapati or dal rice.
