Ingredients Serving: 3

  1. Chopped spinach 1.5 cups
  2. 2 potatoes , chopped
  3. 2 tomatoes, chopped in small pieces
  4. 1 Onion pureed
  5. Chopped green chili 1
  6. Ginger chopped 1 teaspoon
  7. Cumin seeds 1 teaspoon
  8. Turmeric 1/2 teaspoon
  9. Chili powder 1/2 teaspoon
  10. Garam masala 1/2 teaspoon
  11. Coriander powder 1 teaspoon
  12. Hing 1 pinch
  13. Salt as per taste
  14. Ghee 1 tablespoon

Instructions

  1. Heat ghee in a pan. Splutter cumin seeds. Add hing and mix well
  2. Add ginger paste and green chili. Saute for 1 minute
  3. Add onion paste and mix.When onions turn golden brown, add tomatoes and cook until tender
  4. Add spice powders and salt. Mix and cook for a minute
  5. Add spinach and potatoes. Mix well
  6. Add water and bring to boil. Cover and cook until tender stirring occasionally
  7. Serve hot with paratha
