Ingredients to make Atta Raan

  • Whole leg of Baby Lamb : 1 no ( 800 gm)
  • Ingredients for 1st Marination:
  • ginger & Garlic paste 50 gm
  • salt to taste
  • Red chili powder 50 gm
  • Refined oil 20 ml
  • Ingredients for 2nd Marination:
  • Garam masala powder 5 gm
  • Roasted cumin powder 5 gm
  • Kastoori methi powder 5 gm
  • lemon juice 20 ml
  • ginger and garlic paste 50 gm
  • Mustard oil 30 ml
  • yogurt 200 gm
  • Hung curd 100 gm
  • Vegetable oil 30 ml
  • Ingredients for mint Sauce:
  • coriander green 100 gm
  • Chili green 10 gm
  • mint leaves 5 gm
  • garlic whole 10 gm
  • ginger whole 5 gm
  • butter 50 gm
  • Crushed masala Ingredients:
  • coriander seeds 10 gm
  • Black pepper whole 3 gm
  • Chili flakes 2 gm
  • fennel seeds 5 gm
  • Dough Ingredients:
  • Refined flour 800 gm
  • water 300 ml
  • For covering the leg of lamb: 1 banana leaf

How to make Atta Raan

  1. 1st Marination: Clean the whole Leg of lamb Leg and put three slits on the each side and two slits on the leg parts.
  2. Take all the ingredients of 1st marination and make marinade and apply to the whole leg of lamb and keep aside for 1 hour.
  3. 2nd Marination: Make a marination with ingredients mentioned above in 2nd marination.
  4. Dry roast the all ingredients in the highlighted ingredients and crush them all together and add to marination. Apply this marination to the leg of lamb and keep it aside for 1 hour.
  5. Then cook leg of lamb in Tandoor or in oven till it 60% done. Cool down the Leg of lamb.
  6. 3rd Marination: Make the Mint sauce and mix with melted butter. Apply this marination to cooled leg of lamb. And wrap the lamb leg with banana leaves.
  7. Make semi hard dough roll in to two sheets and wrap the leg of lamb which is wrapped with banana leaf. Do the curving on top of the dough if you are placing the Leg of lamb for display.
  8. Oven roast the wrapped Leg of lamb for 25 min at 130 degree celsius and then for 45 min at 160 degree celsius.
  9. Serve hot with slice onion and lemon wedges.
