Ingredients Serving: 2

  1. Ingredients for puri
  2. 1 cup all purpose flour
  3. 1 tbsp oil
  4. salt as required
  5. water as required
  6. Ingredients for ragda
  7. 2 tbsp oil
  8. 1 tbsp ginger garlic paste
  9. 1 tsp green chilies paste
  10. 1 tsp red chilli powder
  11. 1/2 tsp turmeric
  12. 1/4 tsp gram masala
  13. 2 tbsp water
  14. 1/2 cup boiled potatoes
  15. 1/2 cup boiled yellow peas
  16. 1 tsp tamarind paste
  17. salt as required
  18. Ingredients for green chutney
  19. 1/2 cup fresh coriander
  20. 1/2 cup green chilies
  21. salt as required
  22. 1 tsp oil
  23. Ingredients for kokum ( amsool) chutney
  24. 2 tbsp kokum paste
  25. Black salt as required
  26. For garnish
  27. Crumble chat puri, black pepper, black salt, sliced onion


  1. In to a bowl add all purpose flour, salt and oil mix well add some water and knead to make soft dough and dough rest 10 minutes make smooth balls out of it Roll it in to a small puri
  2. Now heat the oil in a pan on slow heat puri half cook fry them remove it
  3. Put in paper towel and press it
  4. Add oil to heat pan add ginger garlic paste and green chilies paste and stir it few seconds
  5. Add turmeric and red chilli powder stir it and some water and mix well and cook few minutes
  6. Add boiled potatoes and boiled yellow peas all mix cook few minutes
  7. Add some salt, garam masala and tamarind paste stir it
  8. In bowl add soak Kokam paste and black salt mix ready to kokam chutney
  9. In mixture grinder add fresh coriander, green chilies and oil churn it ready to green chutney
  10. Assembling for puri chat
  11. In plat arrange the puri on top put it potato mix crumble crisp chat puri with black pepper and black salt
  12. Top up add kokam chutney and green chutney and add some onion rings
  13. At last sprinkle black pepper and black salt
