ABOUT Chinese Scallion Pancake RECIPE

A scallion pancake is a kind of pancake made with green onions. In Mandarin, it’s known as cong you bing. It’s hard to tell where it was first created, but many of these tales point to Shanghai in northeastern China. It’s a popular breakfast flatbread in China. The scallion pancake greatly resembles an Indian paratha.

Ingredients Serving: 4

  1. 250 gm all purpose flour
  2. Sugar 1 tbn
  3. 2 green onion/spring onion bunches chopped finely
  4. salt to taste or 3/4 tsp
  5. hot water 80 ml
  6. cold water 70 ml
  7. 2 tbn oil for dough, 1 ts for rolling,1 Tb for cooking
  8. additional flour for dusting

Instructions

  1. Place all the dry ingredients, besides green onions in a mixing bowl
  2. Add hot water and oil first and mix roughly for a minute
  3. Then pour in the cold water and knead into soft pliable dough
  4. Rest the dough covered aside for 20 minutes
  5. Use this time to clean and finely chop the green onions
  6. After resting period place the dough on the working surface or rolling board
  7. Dust some flour and reknead the dough to make it slightly firm
  8. Make batches of handful of dough ready to be rolled flat
  9. Without adding much flour for dusting roll out a handful into square/round shape as desired
  10. Next brush 1 ts oil on the surface and add a generous amount of green onions
  11. Gently Start rolling into cylindrical log
  12. Now fold/roll into a circle and rest aside while you create the rest of the rolls with the remaining dough in similar fashion
  13. Now flatten the rolled dough on the rolling surface using your hand and gently start to roll them into a disc again
  14. Heat oil in a non stick pan and spread it evenly and place the flat bread on it
  15. Cook on both sides on medium-Low heat till done and take off heat
  16. Serve hot with soy sauce or any spicy sauce of your choice
