Amaranth leaves or mulaikeerai(tamil) are highly nutritious with lots of iron, fibre and minerals. Combined with dal and cooked in South Indian style it goes well with rice, roti and ragi kali

Ingredients Serving: 5

  1. Amaranth 2 bunches
  2. Toor dal 1/2 cup
  3. Shallots 100 gms
  4. Garlic 6 pods
  5. Red chillies 5
  6. Tomato 1
  7. Grated coconut 1 tablespoon
  8. Mustard seeds 1/2 tsp
  9. Jeera 1/2 tsp
  10. Urad dal 1/2 tsp
  11. Curry leaves few
  12. Turmeric powder 1/2 tsp
  13. Asafoetida a pinch
  14. Salt accordingly

Instructions

  1. Pressure cook toor dal with 2 cups water For 4 whistles
  2. In a kadai add 2 tsp oil and add mustard, jeera and urad dal
  3. Once it splutters add shallots,garlic,asafoetida, red chillies,curry leaves,and saute well
  4. Add the finely chopped amaranth and cook for 5 mins in low flame
  5. Add this to the cooked dal and let it boil
  6. Add 1 finely chopped tomato and salt as required
  7. Once the greens are cooked well add the grated coconut.
  8. Serve hot with rice,roti or ragi kali
