It's one of the most preferred evening snack.this is the most pipular indian street food and loved by everyone whether kids or adults.

Ingredients Serving: 4

  1. 20 puri of golgappa ( readymade)
  2. 1 medium onion chopped
  3. 1/2 cup sev
  4. 1/4 cup tarmarind chutney
  5. For pani:
  6. 1 litre water
  7. 1/2 cup mint leaves chopped
  8. 1/2 cup coriender leaves chopped
  9. 1-2 green chilli chopped
  10. 1/2 inch ginger chopped
  11. 1 lemon juice
  12. 3 tbsp sugar
  13. 1 tsp chaat masala
  14. 1/2 tsp black salt
  15. salt totaste
  16. 1/2 cup boondi ,soaked and drained
  17. For pani puri stuffing:
  18. 1 1/2 cup boiled,peeled and mashed potato
  19. 1/2 tsp red chilli pwr
  20. 1/2 tsp cumin pwr
  21. 1 tsp chaat masala
  22. salt to taste
  23. 1/2 tsp black salt
  24. 1 onion chopped
  25. 2 tbsp chopped coriender leaves


  1. Making pani puri stuffing:
  2. In a bowl, mix the potatoes, onions, coriander leaves, cumin powder, chaat masala powder and black salt or regular salt. mix well and keep aside.
  3. Making pani:
  4. Combine the all ingredients except the black salt in a blender and grind to a fine paste using a little water.
  5. Transfer the paste into a large bowl and combine with 1 litre of water, the black salt and salt and mix well
  6. Chill for at least 2 to 3 hours after making so that all the flavours have blended properly.
  7. Add the boondi to the pani.
  8. How to proceed:
  9. Crack the top of the puri with a spoon. add 2 to 3 teaspoons of the boiled potato-onion filling in the puri.
  10. Stir the green pani first and then add it in the puri optionally you can add some sweet chutney in the puri.
  11. Serve the pani puri immediately
