About Rui Macher kaliya Recipe

Macher Kalia" (spicy and rich fish curry) is one of the signature dishes from Bengali cuisine.  Rohu is also served deep fried in mustard oil, as kaliya, which is a rich gravy made of a concoction of spices and deeply browned onions and tomoto.

Ingredients to make Rui Macher kaliya

  • Fried rohu fish 500gms
  • potatoes(2 Medium size) chopped in slices(optional)
  • 4 Medium onion(fine slices)
  • 1 Medium tomato (fine slice)
  • 1 bay leaf 1 inch cinnamon (crushed) 2 cardamom (crushed)
  • 1/4 cup mustard oil(7-8)tbsp
  • 1/2 tsp turmeric powder
  • Kashmiri chilli powder 1tbsp
  • sugar 1/4tsp
  • salt to taste
  • coriander leaves chopped 2 tbsp
  • 1 Cup water
  • For masala :
  • 2 Medium onions(roughly chopped)
  • garlic 8-10 pods
  • ginger 1inch (roughly chopped)
  • coriander seeds 1tsp
  • cumin Seeds 1tsp
  • 2 Dry red chilli
  • 1 Green chilli
  • 1 small bay leaf

How to make Rui Macher kaliya

  1. Procedure to Make Masala: Place all ingredients into mixie jar and put little water and  grind to paste.
  2. Place a heavy bottom pan or kadhai put the oil and once the oil is heated, add the sugar.Let the sugar to caramelized (don't burn it) ,add crushed cinamon, cradmom and bay leaf, saute it for a minute
  3. Add sliced onions,and saute till it turns golden brown(tips: add salt in this stage as it helps the onion to cook fast). Now add in tomatoes and cook till the tomatoes turn little mushy.
  4. Now add the turmeric and chilli powder,saute it for a few seconds.Time for masala to go in, saute it till it roasted and cooked( all raw smell of masala goes off and oil start coming from sides)
  5. Now add fried potatoes or you and raw potatoes after adding masala.Now add water and bring this whole thing to a good boil, cover and simmer till oil floats on top.
  6. Now add in fried fish and cook for 10 mins.Garnish it with chopped coriander leaves
  7. Fish curry/Macha kaliya serve hot with rice or chapatis( Indian breads
