ABOUT Jhunka Bhakar And Pithla RECIPE

Being a Maharashtrian I can swear by Jhunka bhakar , a very rustic kind of meal from Maharashtra .Tasty dry sabji from spring onion and chana dal flour served with Jowar roti , Besan Pithla , green chillies , dry garlic Chutney. ummmm heaven Healthy Yummy Protein packed complete food .. no one can prepare best other than Maa . Ingredients Serving: 2

  1. Spring onion wahsed and chopped 4 cups
  2. Chana dal flour 1 tablespoon
  3. Oil 1 tablespoon
  4. Mustard seeds 1 teaspoon
  5. Turmeric powder 1/2 teaspoon
  6. Red chilli powder 1 teaspoon
  7. Salt to taste
  8. For Jowar Bhakari
  9. Jowar flour 2 cups
  10. Salt to taste
  11. Warm water 1 cup
  12. For Besan Pithla
  13. Chana dal flour 1 cup
  14. Butter milk 1 cup
  15. Garlic and green chillies paste 2 teaspoon
  16. Curry leaves 4-10
  17. Oil 1 tablespoon
  18. Mustard seeds 1 teaspoon
  19. Chopped green chillies 2 teaspoon
  20. Turmeric powder 1/2 teaspoon
  21. Red chilly powder 1 teaspoon
  22. Asafoetida powder 1/4th teaspoon
  23. Water 2 cups
  24. Salt to taste
  25. Onion and green chillies for serving

Instructions

  1. For Spring onion Jhunka Finely chopped spring onion
  2. Heat oil in a pan, splutter mustard seeds ,add turmeric powder and red chilli powder
  3. Add chopped spring onion and salt to taste. Mix well and cook covered for 2-3 minutes
  4. Add 1-2 tablespoon of chana dal flour and mix well
  5. Cook covered for next 5 minutes and it's ready to serve .
  6. For Jowar bhakari In a mixing bowl take Jowar flour, salt to taste
  7. Add warm water and knead a hard dough
  8. Take a tennis ball size dough Dust it with some dry flour and roll out a little thick roti/ Bhakar by tapping with fingers . (Don't use rolling pin) Cook on tawa from both sides
  9. Then directly roast on flame and it's ready to serve
  10. For besan pithla, In a mixing bowl take besan , garlic green chilly paste, butter milk , salt and asafoetida ..
  11. Add some more water and Mix well without lumps
  12. Heat oil in a pan , splutter mustard seeds, add curry leaves, chopped green chillies , turmeric powder and red chilly powder
  13. Saute' for a second and add besan and butter milk mixture
  14. Cook it with consistent stirring till thickens and then cook covered on low heat for next 5 minutes
  15. Garnish with chopped coriander and it's ready to serve
  16. For serving take a dish , place Jowar bhakari, Jhunka , besan pithla , onion and green chillies .. serve hot and enjoy endlessly
