Ingredients Serving: 6

  1. Raw mango 2kg
  2. Sugar 1 1/2 kg
  3. Asafoetida 1 tbsp
  4. Salt 200gm or as required
  5. Whole Black cardamom 50gm
  6. clove 10-12
  7. Black pepper corn 2tbsp
  8. Red Chili Powder 1 Tsp
  9. Cumin seeds 1tbsp


  1. wash thoroughly the raw mango peel,deseed and grate the mango
  2. take a broad vessel and put the grated mango, asafoetida and salt in it let it remain for one day in sunlight
  3. on the next day add sugar and mix evenly and let it remain in sunlight
  4. don't disturb for 2 to 3 days just mix with hands or spoon
  5. now heat a pan and add black cardamom seeds, Clove, cumin seeds and black pepper corns and dry roast
  6. now powder the whole spices in a grinder
  7. add the powdered spices,red chilli powder in achar and mix evenly
  8. let it remain in sunlight for 1more day, the achar is now ready to eat
  9. store in an air tight container for longer use
