Ingredients Serving: 3

  1. 400 gms okra
  2. 3 to 4 tbsp gramflour
  3. 1/2 cup water (optional)
  4. 1 tsp turmeric powder
  5. 1 tbsp Cumin seeds
  6. 1/2 tbsp chilli powder
  7. 1 tbsp coriander powder
  8. 1 tbsp dry mango powder
  9. 1/2 tbsp asafoetida powder
  10. 1/2 tsp garam masala
  11. salt as per taste
  12. 5 tbsp mustard oil
  13. 1.5 tbsp ginger paste

Instructions

  1. Heat mustard oil in a wok or kadhai, add cumin seeds..let it sputter. And then add the ginger paste, sautee it well and add cut okra.
  2. Add salt as per taste, mix the okra and cover it with a lid on sim flame, till the time we wait.Season out chickpea or gram flour well.
  3. Put the gram flour on an open pan (tawa on which you make rotis) Keep it on sim flame. Now add turmeric powder, coriander powder, red chilli powder, garam masala, dry mango powder, asafoetida powder in the flour.
  4. Mix it properly and wait for flour to turn light brown, keep mixing the seasoned gramflour powder.
  5. Now on your other flame, okra must be soft by now and almost cooked, add seasoned besan into the okra. Mix well.. the seasoned gramflour will stick a little to the okra due to steam.
  6. Still if you find them to be really dry you can add 2 to 3 tbsp water into it, and mix so that the gramflour is covering each okra well.
  7. Turn off the flame.. relish it with a khasta parantha or tawa roti
