Ingredients to make Oriya style Dal fry

  • To be pressure cooked
  • chana dal – 1.5cup
  • green chilly – 2
  • ginger – 1/4th inch piece
  • turmeric powder – 1/4tspn
  • For tempering
  • onion – 1
  • tomato – 1
  • green chilly – 2
  • ginger garlic paste – 1/4th tspn
  • mustard seeds – 1/4thtspn
  • cumin seeds – 1/2tspn
  • asafoetida – one to two pinches
  • chilli powder – 1/4th tspn
  • Garam masala – one pinch
  • salt – according to taste

How to make Oriya style Dal fry

  1. Wash and soak chana dal for two hours.
  2. In a pressure cooker add soaked chana dal, 2 to 3 cups of water, crush ginger (but retain the shape), fine slices of chilly and turmeric powder. Cook for 3whistles. Set aside. Once pressure is released mash slightly.
  3. For the tempering: In a heavy bottom vessel heat few tspns of oil. Add mustard seeds and cumin seeds. Once it crackles add slit green chilly and finely chopped onion cubes. Fry till light golden brown. To this add ginger garlic paste and sauté till raw smell disappear.
  4. Add finely chopped tomato cubes. Fry till it leaves sides of vessel. Add chilly powder, turmeric powder and Asafoetida. Also add kasuri methi and garam masala. Fry for a minute. Transfer this to dal. Season with salt and mix well.
  5. Garnish with finely chopped coriander leaves/ grated coconut.
  6. Serve hot with rice/roti.

My Tip:

Spices and Ingredients can be altered according to Individuals taste.
