ABOUT Fiery Egg Bhurji with Pav RECIPE

Egg Bhurji is a popular dish of North India. Having egg bhurji for breakfast is good way to start your day on a cold winter morning. This dish is an Indian version of scrambled egg but with a paradox; egg bhurji is more flavourful and fiery.There are many variations of this dish. Egg bhurji can be made in a jiffy and hence much preferred by bachelors and working ladies.It pairs up very well with rotis ,parathas or buns.

Ingredients Serving: 4

  1. Onions 200gm finely chopped
  2. Eggs 4 large
  3. Tomatoes 2 medium size finely chopped
  4. Ginger paste 1/2 teaspoon
  5. Green chillies 3 finely chopped
  6. Coriander leaves 1/2 cup chopped
  7. Green peas boiled 1/8 cup
  8. Turmeric powder 1/2 teaspoon
  9. Coriander powder 2 teaspoon
  10. Red Chilli Powder 1/2 teaspoon
  11. Garam Masala Powder 1/2 teaspoon
  12. Salt to taste
  13. Oil 2 to 3 tablespoon
  14. Pav buns 8
  15. Butter for warming buns

Instructions

  1. Heat oil in wide non stick pan
  2. Add the onions and saute for 5 -7 minutes till translucent
  3. Add the ginger paste and green chillies and all the dry spice powders except garam masala powder.
  4. Saute for a minute and,add tomatoes
  5. Continue to saute till tomatoes soften
  6. Now in this pan break the eggs and let them cook along with the other ingredients in the pan.
  7. Sprinkle coriander leaves at this stage leaving some for garnishing
  8. Once the eggs just start coagulating scramble them into medium size pieces.
  9. Now add the boiled peas and remaining chopped coriander.
  10. Sprinkle garam masala
  11. Cover and cook for a minute.
  12. Put off the flame.
  13. Serve hot with buttered warm pavs.
