Ingredients to make Punjabi panjiri

  • 1 cup whole wheat flour

  • 1 tablespoon white sesame seeds
  • 18 to 20 dry roasted cashews and almonds
  • 15 to 18 raisins (kishmish)
  • 4 tablespoon desi ghee

How to make Punjabi panjiri

  1. Take 1 cup whole wheat flour in a thick bottomed broad pan.
  2. Keep the pan on a low flame or sim and begin to roast the whole wheat flour. In the mean time chop almonds and cashews very finely.
  3. Keep roasting till the color changes and you get nutty aroma from the whole wheat flour. It takes about 9 to 12 minutes on a low flame.
  4. Then add 4 tablespoon ghee in the flour and mix very well. Add chopped cashews and almonds.
  5. Switch off the flame and add the powdered sugar. Mix very well. Then add raisins , sesame seeds and mix again.
  6. Allow the panjiri to cool. Then store in an air tight box and serve panjiri.

My Tip:

Whole wheat flour can also be roasted in ghee.
