It’s versatile, quick and really quite delicious if cooked right. Eggs are a part of most of our daily lives. It’s chameleon like ability to transform from a light poached egg to an omelet to a protein-laden boiled egg just makes it one of the best things to stock in your larder.

What’s even better is that eggs don’t restrict them to only one kind of meal – you can have eggs for breakfast, lunch or dinner thanks to the fact that they cook up beautifully with herbs and spices.

Nutritious and appetizing, here are five ways to make the best possible meals with eggs:


Nargisi Kofta: A Hyderabadi dish with minced meat coated boiled eggs.

One of the richest egg dish that exists, the Nargisi Kofta is decadence and then some. Boiled eggs wrapped in minced meat and then deep fried only to be submerged in a rich and well-spiced gravy.  This version of the kofta is very popular in most Muslim households and is desi take on the Western Scotch Eggs. Shakshuka:  A middle-eastern breakfast dish

While the name is exotic  this Tunisian Arabic dish is really quite simple. Poached eggs in a thick sauce of tomatoes, chili peppers, and onions, often spiced with cumin is traditionally made in a cast iron skillet. Served with a thick hunk of bread, it’s normally eaten straight off the pan. Here’s how you can make it.

Omelet Curry:  A very common dinner meal from down South

Eggs Kejriwal:   Parsee-style eggs made with bread, cheese and well, eggs

 When a man’s love for eggs makes him rebel against his pure vegetarian community, the least can be done is to give the dish his name. Mr Devi Prasad Kejriwal is the man behind this simple twist of eggs on toast. While the popular akoori is the more typical Parsi-dish, this buttery concoction of bread, cheese and eggs will make you feel like you’ve just eaten a slice of heaven. Here’s the recipe.
