  • Dulce de leche and Brown bread ice-cream!
    Cook time 10 mins

This recipe is inspired from a brown bread ice-cream from James Martin's Desserts . Instead of an egg based vanilla ice-cream base (like in the book), I used a basic two ingredient base - dulce de leche made from a can of condensed milk and whipping cream. The toasted brown bread crumbs swirled into the rich caramel ice-cream tastes so delicious and has a unique texture. A little like butterscotch ice-cream but even better!

  • Carrot Halwa pies
    Cook time 40 mins

The inspiration for this recipe comes from Chetna Makan's book THE CARDAMOM TRAIL. Chetna was a participant on the Great British Bake off , and on the show as well as in her book, she marries Indian flavours and international bakes in the most amazing ways. Chetna's halwa tarts have a moong dal halwa filling and a shortcrust pastry base. I used my favourite carrot halwa encased in some quick puff pastry. The buttery, flaky layers of the pastry really elevates the carrot halwa to another level altogether!

  • Tiramisu with Flambéd Peaches
    Cook time 0 mins

Even though I enjoy cooking and love having guests over for a lavish feast, I find extra motivation in improvisation. I also love experimenting and my guests are usually thrilled about being the 'Guinea Pig' for a fun spread. That said, I came across this recipe looking for a twist on the famous Italian dessert - Tiramisu. The original recipe is credited to Alida and you'll find it on http://www.mylittleitaliankitchen.com/peach-tiramisu-with-white-chocolate/ Please note, I chose to flambe with rum and also chose mixed berry juice because the combination of rum, mixed berry, peach, white chocolate and hazelnuts in your palate gives you a wonderful experience! Also, a white chocolate and hazelnut combo is a winner for any group of guests at the dessert table!
