About Chicken Fry Recipe

This is a typical Kerala dish . It can be made with mutton or prawns in the similar way. A perfect accompaniment to rice with the other add ons. Chicken Fry is a dish that can instantly bring water to anybody’s mouth and is so flavourful that it is always on the menu for every party. When chicken is fried to perfection, it becomes one of the most irresistible things ever. Chicken pieces are coated with a batter and crumbs and are then either deep fried or pan fried. There are many ways of making Chicken fry or fried chicken, in India, chicken fry is made more flavourful by the addition of aromatics and special spices. The spices may vary according to the region. There are chicken fry recipes available that one can choose from. It is best to ensure that the chicken being used is fresh and the oil in which it is fried is odourless and clean. So, pick up a good chicken fry recipe and get going!

Chicken Fry

Ingredients to make Chicken Fry

  • 250 gms chicken boneless chopped into small pieces.
  • For Marinade: 1 tbsp yogurt
  • 1 tbsp. shallots chopped
  • 1/2 tsp. each of ginger and Garlic paste
  • 1/2 tsp. each of coriander powder
  • 1/2 tsp. chili powder garam masala and turmeric powder .
  • For Seasoning: 2 tbsp oil
  • 1 tbsp shallots sliced lengthwise
  • 2 Greenchillies slit length wise
  • 1 tbsp coconut grated/chopped finely
  • 1/4 tsp mustard seeds
  • salt to taste
  • For Garnishing: 1/2 tsp. fennel seeds roasted and powdered
  • 1/2 tsp. pepper powder
  • A few curry leaves

How to make Chicken Fry

  1. Thoroughly wash chicken pieces and pat dry. Take this into a bowl and add all the ingredients mentioned under ‘marinade’ and combine well. Leave this for an hour by covering.
  2. Cook chicken after one hour of marination if required add some water. Once the chicken turns tender, dry off the water and set this aside.
  3. In a heavy bottom pan, add oil and on medium heat start adding the ‘tempering’ ingredients one by one.
  4. When the onions starts to brown, add grated coconut and fry till golden brown color on low flame.
  5. Now add above cooked chicken pieces along with thick marinade. Fry for another few minutes. Sprinkle pepper powder and garam masala powder along with curry leaves.
  6. This will taste best when served hot with rice and curry.

My Tip:

The garnishing powder which gives a special aroma and flavor.

we can skip marinating but the taste n d tenderness of the chicken differs
