ABOUT Medu Vada Dahi Badey... RECIPE

A most loved dish at iftaar in Hyderabad is dahi badey and these are made in medu vada style by me for a change and just to give it a new look this festive season. Use of chillies can be according to one's own preference. Kids as well as adults both love this cool, fluffy and melt in mouth dahi badeys a lot. This is a prominent feature at many an iftaar tables through out the city during Ramadan. And this time, it is a must have due to the extreme hot weather. Happy Iftaar Time Friends !!!!!!!!!!

Ingredients Serving: 10

  1. Split black gram or urad dal 2 cups
  2. Salt 1 tbsp + 1 tbsp
  3. Green chillies chopped 4
  4. Onion chopped 1
  5. Yoghurt 400 gm
  6. Grated ginger 1 tbsp
  7. FOR TEMPERING ; Cumin seeds 1 tbsp
  8. Curry leaves 10
  9. Oil 2 tbsp
  10. Dry red chillies 4
  11. Coriander leaves chopped 1/4 cup
  12. Oil for frying 2-3 cups

Instructions

  1. Soak dal overnight for best results.
  2. Grind it into a thick and smooth paste using as little water as possible.
  3. Add onion, half of chopped chillies and coriander leaves.
  4. Reserve the other half for tempering.
  5. Add salt and grated ginger too.
  6. Mix well and make medium sized vadas.
  7. Deep fry in hot oil on medium high heat.
  8. Beat yoghurt well using half a cup of water. Do not add more.
  9. Add in salt too.
  10. Add the hot vadas into this yoghurt and let them remain soaked in that. See to it that they are fully drenched in yoghurt.
  11. Heat oil for tempering.
  12. Add cumin seeds and dry red chillies.
  13. Also add chopped coriander and green chillies followed by curry leaves.
  14. Mix well and pour the hot tempering over the dahi badey.
  15. Enjoy these fluffy and melt in mouth dahi badeys at iftaar time.
