About Cheese stuffed Hara Bhara Kebabs Recipe

Hara bhara kebabs make a great party starter or evening snack. The addition of chickpeas and cheese adds to the taste and nutrition.

Cheese stuffed Hara Bhara Kebabs

Ingredients to make Cheese stuffed Hara Bhara Kebabs

  • 2 cups spinach/ Palak
  • 1 cup boiled Chickpeas/ kabuli chana
  • 3/4 cup Peas/ matar, boiled
  • 3-4 stems coriander leaves
  • 1 cup Bread crumbs
  • 1 tsp Chaat masala powder
  • 1 tsp Amchur powder/ Dry mango powder
  • 1 tsp roasted cumin powder
  • 1 inch ginger
  • 2-3 green chillies
  • Mozzarella cheese cut into cubes
  • Rice flour + Fine sooji for dusting
  • 1 or 2 tbsp oil per kebab for shallow frying

How to make Cheese stuffed Hara Bhara Kebabs

  1. Blanch chopped spinach in salted water. Immediately dip in cold water to retain its color. Drain and keep them aside.
  2. In a grinder take the blanched spinach, add the peas, chickpeas, green chilies, coriander leaves and ginger. Grind to a semi coarse paste.
  3. Add all the dry spice powders, roasted cumin powder, raw mango powder, bread crumbs, salt and mix the kebab mixture uniformly.
  4. Shape the mixture into round patties, place the mozzarella cube in the centre and seal the kebabs well.
  5. Roll the kebabs in rice flour and then in fine sooji for a crisp coating. This step is optional.
  6. Shallow or pan fry the kebabs till golden brown.
  7. Serve hara bhara kebab hot with chutney or sauce.

My Tip:

These kebabs can also be baked as well as grilled. You can bake kebabs at 180 degrees centigrade which is a moderate oven temperature. Brush some oil on the kebabs. Just place the kebabs on a tray or wired rack and bake for 20-25 minutes or till the kebabs get browned from the top. You can change the sides after 10-15 minutes of baking.
