Ingredients to make Kuzhi Paniyaram

  • 1 cup urad dal
  • 1 large Chili, chopped finely
  • 2 inch piece of ginger, chopped finely
  • 1 large onion, chopped finely
  • 3 cups rice
  • 4 tablespoons salt
  • 1 tablespoon crushed peppercorn

How to make Kuzhi Paniyaram

  1. Soak Urad dal and rice in water for 3-4 hours and grind in a mixer.
  2. Ferment the batter overnight after adding salt to it.
  3. Take a large portion of the batter and add chopped onions, ginger and peppercorns.
  4. Take a Paniyaram or Appam pan and add a little oil in each of the cups and pour the batter in the cups.
  5. Wait till you can flip the paniyaram with a spoon or/ and until it is golden on either sides.
  6. Serve with lime or mango pickle. This versatile dish goes well with red chutney as well.

I make it with love, when I see my children's smiling faces every day.
