Kerala Style Vegetable Avial

Ingredients to make Kerala Style Vegetable Avial

  • 1/2 cup sour curd
  • 3-4 cups of mixed vegetables(carrots, French beans, Peas, lauki & drumsticks)
  • 1 tspn cumin
  • 1-2 Green chillies
  • 3/4 cup grated fresh coconut
  • a pinch of turmeric
  • Salt to taste
  • Tadka --
  • few curry leaves
  • 1/4 tspn mustard seeds
  • 1 Dry red chilli
  • 1 tspn coconut oil
  • a pinch of Hing
  • Little chana dal and urad dal

How to make Kerala Style Vegetable Avial

  1. Grind the coconut, chillies and cumin seed into a paste
  2. In a pan take the chopped vegetables and water and boil them
  3. Add a pinch of turmeric and boil till soft but make sure the vegetables don't become mushy
  4. Then add the coconut paste to the vegetables. Cook for 5 mins.
  5. Then in a tadka pan heat the oil and put the mustard seeds, curry leaves, urad and chana dal, dry red chilli and hing.
  6. Once you get the aroma add the tadka to the vegetables.
  7. Remove from heat and once it cools down slightly add the yogurt and give a good mix. Your Avial is all ready
