ABOUT Nadipadam RECIPE

This recipe is from Kannur district of Kerala. My mummy taught me this recipe. I simply love this recipe & I call it Mallu Beef Pizza. its yummy cum filling recipe.

Ingredients Serving: 8

  1. For filling :-
  2. Bonless Beef or mutton or chicken - 1/2kgs
  3. Onion - 10 to 12 medium size
  4. Green chillies - finely chopped (to taste)
  5. Garlic paste - 1/2 tbsp
  6. Oil - 2tbsp
  7. For batter :-
  8. Broken Basmati Rice - 3 cups
  9. Eggs - 10
  10. Salt - to taste

Instructions

  1. Soak rice for atleast 6 to 7 hours.
  2. Boil the mutton / chicken ,shred it and keep it aside.
  3. In a vessel add 2 tbsp oil . Add onion, green chilli, salt and cook it till it becomes soft (don't make it brown, it should be light pink and soft).
  4. Then add garlic paste, shredded beef/ mutton/chicken and cook it on low flame. When it gets cooked, incorporated well, remove it from the flame.
  5. Now prepare the batter. In the grinder add 1/3rd of the rice and 4eggs and salt & grind them to very fine mixture. ( DO NOT ADD WATER ).
  6. The mixture should be very fine and smooth. Pour it in a big bowl or vessel and repeat the same with remaining rice and eggs.
  7. If needed add dash water. The batter shouldn't be too thick nor too thin but of medium and pouring consistency.
  8. In a steamer add 3 mugs of water and bring it to boil.
  9. On medium flame , in another shallow round vessel ( which is being use to make dhokla etc or you can use any shallow vessel which can be fit easily in the steamer.)
  10. Add some homemade ghee or asli ghee (DO NOT USE DAALDA OR ANY ARTIFICIAL GHEE).
  11. Pour 2 ladle spoon of rice and egg mixture and spread it well at the bottom of the vessel. Spread beef or mutton or chicken masala on it evenly. Again pour some rice mixture on the masala to cover it well. (DO NOT POUR MORE MIXTURE.)
  12. Put the vessel in the steamer , cover the lid and put a heavy stone on the lid and cook for 8 to 10 mins.
  13. Remove carefully, cut like pizza, Serve hot with ketchup. Repeat the same procedure with the rest of the batter & masala.
