Kiwi cheese cake

Ingredients to make Kiwi cheese cake

  • for base-
  • 150 gms Mcvites / marie biscuits
  • 2-4 tbsp melted butter
  • 1-2 tbsp powdered sugar
  • For Filling-
  • 1 tin (400 gm) condensed milk
  • 200 gm cream cheese
  • 2 tbsp Gelatin
  • 1/2 cup hot water
  • 1 tsp vanilla essence
  • Kiwi pieces optional
  • For Glaze-
  • 1 1/2 tsp gelatin
  • 1/2 cup hot water
  • 1/2 cup kiwi crush

How to make Kiwi cheese cake

  1. For the base-
  2. Powder the biscuits in the blender.
  3. Mix with the required amount of melted butter & powder sugar.
  4. Press it into the spring form tin & spread evenly n press with the back of glass or bowl.
  5. Put it in the fridge to set.
  6. If you don't have a spring form tin you can make in normal baking pan lined with a cling film left big enough & cover the sides ,so that it would be easy to lift once it sets
  7. For filling-
  8. Add gelatin to the water and keep aside to bloom.
  9. To melt the gelatin put the gelatin bowl over a hot water bowl till it melts ( double boiler method ).
  10. Beat the softened cream cheese ,vanilla essence & condensed milk with hand blender / mixer till smooth.
  11. Add the melted gelatin mix well.
  12. Take out the mould from the fridge & pour it over the set base.
  13. Let it rest in the fridge till it sets or over night.
  14. For Glaze-
  15. Melt the gelatin as same method .
  16. Once cooled mix the kiwi crush to the melted gelatin and mix well.
  17. Pour it over the set cake, refrigerate till the glaze sets and enjoy
